Cornmeal-Crusted Tilapia

I used to never eat seafood of any kind.

Not because I did not like it, but because I was scared of it.  I did not know how to cook it, what to pair it with, or how to tell when it was cooked through.  (I am also deathly afraid of food-poisoning.)

This is an extremely easy and tasty recipe for beginner tilapia eaters.  The breading does not come off and fall over the pan every time you even look at the fish in the pan!

The Recipe

Ingredients

2 tilapia filets

~ 1/4 c cornmeal

~1 Tbsp flour

garlic powder

onion powder

chili powder

salt

pepper

olive oil

Servings: 2

Mix cornmeal, flour, and seasonings together in a small bowl.  Pat tilapia fillets dry, and dredge in cornmeal mixture.  Place in a skillet over medium heat laced with olive oil.*  Fry on both sides, until fish is cooked, white all the way through, and flaky.  Enjoy!

*Or, use an oil mister!  I love my Misto.
