Green Vegetable Stir-Fry

They say that you should include a variety of colours on your plate for a balanced meal.

Does that rule still stand even when your monochromatic colour scheme is centered around green?  Or can I count the brown rice as my second colour?

Quick, easy and healthy.

Should I be concerned that I managed to single-handedly finish a bottle of soy sauce?  It took me 2 years, but still.

The Recipe


1 medium green pepper, sliced

1/2 medium zucchini, diced

1 c broccoli, fresh or frozen

olive oil

1 Tbsp soy sauce

2 tsp ground ginger

1/2 tsp garlic powder

1/2 tsp onion powder

2 tsp cornstarch in 1/8 c water

1 c brown rice, prepared according to package directions

Servings: 2-3

Prepare 1 cup brown rice and 1 c boiling water according to package direcions.  In a separate pan over medium high heat, fry green pepper first in a little olive oil to desired softness.  Add soy sauce, zucchini, and broccoli later because the green pepper will take the longest to fry.  Mix cornstarch and water together and then add to the vegetables.  Add ginger, garlic, and onion powder.  Mix until the sauce thickens.  Enjoy with brown rice on the side!
