What is the first food that comes to mind when I ask for the name of a healthy main dish?
Probably not “taco”.
But it can be! Especially when it is a fish taco with lots of veggies and seasonings, little oil, and and a low-fat sauce.
The crunchy vegetables are the perfect balance to the soft, warm fish. The creamy avocado sauce pulls it all together. You would think that would be the job of the tortilla, but I am speaking metaphorically, not literally.
1 tilapia filet
2 corn tortillas
Servings: 1 (2 tacos)
Place tilapia in a skillet over medium heat. Sprinkle with seasonings and cook for 2-3 minutes. Flip and season the other side of the fish. Continue cooking until the center of the fish is white and flaky. Cut into smaller pieces and set aside.
Thinly slice carrots, cucumber, and radish into a small bowl. Set aside.
In a small bowl, combine equal parts mashed avocado and greek yogurt. Add lime juice and seasonings and stir.
Combine fish, vegetables, and avocado sauce on 2 corn tortillas. Enjoy!
