Apples and cranberries go well together.
Apples and red cabbage [evidently] go well together.
So, if this were math class, I think we would know for sure that cranberries and red cabbage go well together. Unfortunately and fortunately, cooking is not a math class. However, my mathematical calculations added up to success this time!
Peppery cabbage, slightly sweet-yet-tart apple, and sweet dried cranberries created an enjoyable salad. Tossing the apple pieces in a little lemon juice before adding them to the salad prevented any browning, and everything was nice and crisp at lunchtime the next day.
I did give amounts for the ingredients this time, but only as guidelines. If you are a person that is used to dressing on all salads, then you might want to increase the amount of apple. The juicy apple satisfied my dressing needs, but everyone is different.
1/6 small red cabbage, chopped
1 small carrot, peeled and julienned
1/2 medium apple, diced
2 tsp dried cranberries
Serving: 1 side salad
Toss the diced apple in a little lemon juice in a bowl to coat. Combine all the ingredients in a container, and enjoy!
