Mini sweet peppers!  I may have gone a little overboard, because I bought a 5-lb bag of mini sweet peppers.  True, I am at home right now, so I have people to share with, but still.  That is more than a pound of peppers per person.  (Say THAT five times fast.)

So, to prevent the last of the peppers from their almost-inevitable limp and spoiled fate, I decided to roast them.   Oh, the caramelization….

I did not even bother with any seasonings on these.  This is another “recipe” that isn’t really a recipe.  It is more instructions on how to roast mini sweet peppers.  Either way, enjoy!

The Recipe

Ingredients

Mini sweet peppers, washed and seeded

Olive oil

Servings: Depends?

Heat oven to 400oF. Use oil mister to lightly spray the peppers with olive oil. Place on a baking sheet. Bake for 10 minutes, then flip and bake for 10 more minutes. Enjoy!

  1. can almost smell them 🙂 I buy the 5-pounders, too, as can never have too many. And need to eat lots so they don’t spoil (inevitably!) so it’s forced healthy eating, haha.
