Eggplant Bruschetta

Even after making all that ratatouille, I still had leftover eggplant. Really wanting to eat more roasted eggplant, I decided to make bruschetta.  Might as well use up the leftover (and staling–is that a word?) French bread.  Homemade bread only improves bruschetta. I misted both sides of the bread slices with olive oil and toasted… Continue reading Eggplant Bruschetta

It has been about six years since I first saw the Pixar film for the first time. Back then I really didn’t cook or bake anything beyond the occasional batch of homemade chocolate chip cookies (or sometimes peanut butter chocolate chip).  Despite my lack of cooking-enthusiasm, the multi-coloured dish that loans its name to the… Continue reading Ratatouille

Beef and Pepper Fajitas

The only thing missing is an avocado. I would say that everyone should be impressed that I left my safety zone of only cooking chicken and ground turkey, but that’s not true.  My dad actually cooked a large roast for vegetable soup, and he had some extra.  I decided to put the leftover roast beef… Continue reading Beef and Pepper Fajitas

Truffle Oil and Porcini Mushroom Gnocchi

Originally, I was going to make pesto gnocchi with tomato, but when I pulled out the package of gnocchi, I found this instead: Hmm.  Sounds delicious, but I did not think it would go well with pesto.  I thought the pesto could easily overwhelm the flavour that this gnocchi might have.  Since I had never… Continue reading Truffle Oil and Porcini Mushroom Gnocchi

Roasted Pepper and Turkey Sausage Pizza

Pepperoni will always be my favourite. But sometimes you have to branch out. I have been wanting to make my own sausage for awhile, because I want to get better at adding different seasonings to my food, and in the correct portions.  It seems that I err on the side of caution usually, and the… Continue reading Roasted Pepper and Turkey Sausage Pizza

Mushroom, Chicken Linguini

Sometimes I have no idea what I am doing while I am cooking. I knew we needed to use up the last few King Trumpet mushrooms in the fridge.  Other than that, I had no idea what to do.  I slowly started piecing together ingredients:  Mushrooms…..pasta……chicken….broccoli? This seemed to be a fairly common combination, but… Continue reading Mushroom, Chicken Linguini

Sweet Potato Asian Salad {Packed Lunch Series}

This salad greatly resembles another Packed Lunch series entry: the Sesame Edamame Salad. This time, I omitted the avocado, and decided to include some sweet potato.  The soft, warm sweet potato balanced out the crunch cabbage and carrot.  The sweetness counteracted the slight tang of the cabbage and rice vinegar in the dressing. I love… Continue reading Sweet Potato Asian Salad {Packed Lunch Series}
